Food Safety Taining

1. The Four Pillars of Food Safety (The "4 Cs")
To maintain a safe food environment, every employee must master these four areas:
Cleaning: Ensuring work surfaces, equipment, and hands are thoroughly cleaned and sanitized.
Cooking: Reaching the correct internal temperatures to kill harmful bacteria (e.g., 75°C for poultry).
Chilling: Keeping "high-risk" foods out of the "Danger Zone" to prevent bacterial growth.
Cross-Contamination: Preventing the transfer of bacteria from raw foods to ready-to-eat foods via hands, knives, or cutting boards.
Conduct a Hazard Analysis: Identify where hazards are likely to occur.
Identify Critical Control Points (CCPs): Determine the steps where a hazard can be prevented or eliminated (e.g., the cooking stage).
Establish Critical Limits: Define the "pass/fail" mark (e.g., Minimum temperature of 75°C).
Monitor CCPs: Create a system to check the limits (e.g., using a probe thermometer).
Establish Corrective Actions: What happens if the limit isn't met? (e.g., Re-cook or discard).
Verification: Periodically check that the system is actually working (e.g., testing food samples).
Record Keeping: If it isn't written down, it didn't happen. Maintain logs for all of the above.
Handwashing: Hands must be washed for at least 20 seconds after using the restroom, handling raw meat, or touching the face.
Sickness Reporting: Employees must report symptoms like vomiting, diarrhea, or fever and remain off-work for at least 48 hours after symptoms clear.
Protective Clothing: Clean uniforms, hairnets/beard snoods, and no jewelry (except a plain wedding band).
Traceability: Can the site trace a finished product back to the original raw material batch within 4 hours?
Pest Control: Are there signs of activity? Are bait stations secured and mapped?
Cold Chain: Are fridge and freezer temperatures being recorded at least twice daily?
Allergen Management: Is there a "spill kit" for allergens, and are utensils color-coded?
2. Understanding Food Safety Hazards
| Type of Hazard | Examples | Prevention Strategy |
| Biological | Bacteria (Salmonella, E. coli), Viruses (Norovirus), Parasites. | Temperature control and hygiene. |
| Chemical | Cleaning agents, pesticides, unlabelled allergens. | Secure storage and strict labeling. |
| Physical | Glass shards, metal fragments, hair, jewelry. | PPE (hairnets) and maintenance. |
| Allergenic | Peanuts, shellfish, gluten, soy, etc. | Strict segregation and clear labeling. |
3. The HACCP System (7 Principles)
If you are auditing a food safety system, you are primarily checking the implementation of these seven steps:
4. Personal Hygiene Standards
Individual behavior is the most common cause of foodborne illness outbreaks.
5. Auditor’s Checklist: What to Look For
